Shioya Ichiban Ebisu is the name of a cooperative in the Shioya area of the Sea of Ariake. The area is famous for the quality of its waters and rich vegetation – a feast for the shellfish which are flown to the best tables of Japan and beyond. The seaweed is harvested, sorted, shredded, pressed into sheets and dried in the sun. All the work is done by the fishermen of the cooperative, following ancestral methods of production: no machinery nor chemicals involved.

Made with the top 10% of each harvest (a new harvest will give a fresher nori, with green aromas and a sweet tender flavor), Shioya Ichiban’s PREMIUM GOLD Nori is twice as thick and crispy as lower quality nori: the ultimate nori to be used for special occasions such as a family evening of hand rolls or inventive non-Japanese gourmet cuisines.

In Japan, nori is a staple found in every kitchen and every home. The Japanese eat nori morning, noon and night. It is compulsory in a traditional breakfast menu, with fish or egg, rice and miso soup. For lunch, it can be part of a traditional Japanese meal, but also top a plate of spaghetti as a convenient and delicious substitute for fresh basil leaves. For dinner, its uses are tenfold. And it can also be a low-calorie snack, to be nibbled, plain or lightly seasoned, after school for kids or for grown-ups, in the evening with beer or a glass of chilled white wine.

All peoples in the world roll foods to eat on the go. Tortillas, spring rolls, crêpes… maki and onigiri. Whether in an easy hand roll or a more formal sushi roll, nori is the one thing that pairs best with rice. A few sparse grains of salt on fresh-cooked white rice, a ball of rice shaped into a rough triangle and a piece of nori is Japanese gourmet heaven. First mentioned in writing around the 7th century, nori has been harvested for more than 10 centuries in Japan and is said to be the secret of the youthful looks and beautiful shiny black hair of Japanese women. Today we know that this is not an idle boast: because of its particular method of culture in the unspoiled waters of the sea, nori is low in calories with approximately 1/3 of its weight in vegetable fiber, and full of minerals with a high percentage of iron, vitamins D and E (check), as well as protein. Rich in vitamins B1 and B2, potassium, calcium and natrium, nori is totally suited to a vegan diet.
